Weber’s Official Beer Can Chicken Recipe, Step by Step

The idea behind beer can chicken is simple: standing the bird upright on a partly-full can props it into a shape that lets hot air circulate evenly around the whole chicken, so the breast and legs finish at closer to the same time than they do lying flat. The beer itself contributes some steam and a little aromatic moisture, though its effect on flavor is smaller than the legend suggests — the rub and the indirect heat are doing most of the work.

Ingredients

For the rub

  • 1 teaspoon paprika

For the chicken

  • 1 whole chicken, about 4 pounds, giblets removed

Method

  1. Combine all the rub ingredients in a small bowl.
  2. Pat the chicken dry, coat it lightly with the vegetable oil, and season it all over — inside the cavity and outside the skin — with the rub.
  3. Open the beer can and pour off (or drink) about half of it. Using a church-key style opener, punch two more holes in the top of the can so steam can escape freely as it heats.
  4. Set the can on a stable, flat surface and lower the chicken down over it so the can sits inside the body cavity. The bird should balance on its two legs and the can like a tripod.

  7. Using tongs to steady the bird and a wide spatula underneath, carefully transfer the chicken and can together to a platter. Let it rest 5-10 minutes before lifting the chicken off the can (carefully — the can and any remaining liquid inside will be very hot) and carving.

If your grill grates are uneven or the can wobbles, it’s worth using a purpose-made vertical roaster stand instead of a bare can — same principle, sturdier base. Either way, move the bird as little as possible once it’s set up, and always lift with a spatula supporting the bottom rather than just tongs on the legs.

Because this is genuinely a whole roasted bird rather than a quick sear, a reliable instant-read or leave-in probe thermometer matters more than the clock. Pull the probe from the thigh, away from the bone, since bone conducts heat differently than muscle and will give you a falsely high reading if you touch it.

Does the Beer Actually Matter?

It’s worth being honest about what the beer is actually doing here, because it’s less than the name suggests.
