Smoking a turkey introduces a food-safety wrinkle that doesn’t apply the same way to a smaller cut like a pork shoulder or a rack of ribs: typical smoker temperatures sit right at the edge of what USDA considers safe for a large bird, and getting that detail wrong is a more realistic risk than most home cooks assume.

Why Smoker Temperature Matters More With Turkey

Most smokers run in the 225–275°F range, well suited to breaking down collagen in tougher, fattier cuts over several hours. USDA’s food safety guidance identifies 40°F to 140°F as the “Danger Zone” where bacteria grow fastest, and turkey, a large bird with substantial mass, can spend an extended period passing through that range as it slowly heats from refrigerator temperature.
